You can make this soup in minutes. It’s very tasty too.
1/2 medium onion, chopped
1 Tablespoon minced garlic
6 cups chicken stock
Salt & pepper to taste
1 can (13 – 14 ounces) artichoke hearts (drain and squeeze most of the juice out of the artichokes and cut in 1/4)
8-9 ounces frozen chopped or fresh cut spinach (if frozen, defrost and drain well)
8 ounces cream cheese, cut in cubes
1 pint heavy cream
In a 6 qt pot, fry the chopped onion in some olive oil, add garlic, salt and pepper. To this, add chicken stock, artichoke hearts and spinach. Simmer together for 5 minutes. Add cream cheese cubes a few at a time, stirring until cubes are melted. Add heavy cream. Simmer for 5 minutes and you are done. Yum!
