Homemade chickpea flour pasta

Call me crazy but I wanted to try this. I couldn’t find chickpea flour at my local store so I just bought a 1lb bag of raw chickpeas. I knew I had one of those coffee grinders at home that I only use for things other than coffee, so I gave it a whirl. Just a fair warning, chickpeas are HARD. It took a while to grind through 1/2 bag (that’s all you really need for the recipe.) The chickpea pasta turned out more like a heavy dumpling. I didn’t have any sauce on hand so I just made it like buttered noodles with cheese on top. If you are cooking gluten free, this would be a winner. Adding veggies/a good sauce would make it taste very good.

Ingredients
3/4 cup + 1 Tablespoon of chickpea flour, plus more for dusting
1 good pinch of salt
1 egg

Mixed in blender and then rolled out as thin as you can get it. I tried processing it through my pasta machine but it didn’t work. So get the old rolling pin out…remember thin thin thin! Make your cutouts and boil in VERY salted water. Boil until softened.

    Looks interesting, but how about the taste? Can you tell it was chickpeas?

  2. Yes, definitely checkpeas. I would say it needs a creamy sauce to jazz it up.
