Tiramisu Cannoli

There is nothing like putting together two of my favorites. I made tiramisu cannoli’s. You can make the shells yourself, recipe here https://mommalatteskitchen.com/2011/06/19/sicilian-cannoli/ Or you can buy the shells and fill them. This is my recipe for the tiramisu filling.

Ingredients 

1-15oz container of whole milk ricotta cheese, drained overnight in the refrigerator using cheesecloth to get the extra water out.

1-16oz container mascarpone cheese

1-cup confectioners sugar

1-TBL cornstarch

1 TBL+1/4 teaspoon espresso powder (you can substitute a fine grind, dark roast instant coffee)

1 teaspoon vanilla

½ cup mini semi sweet chocolate chips

Stir all ingredients together and place in refrigerator overnight to chill. This is an important step. It must be very cold.

When ready to serve, fill shells using a pastry bag with tip. Dust with confectioners sugar or sweetened cocoa powder/espresso powder mix. I used both here. Makes about 15 cannoli’s. Always keep refrigerated until ready to eat.
