Super fast, super healthy for you. Makes a great side or have it for lunch!
- Ingredients
1 can chickpeas or 1 cup raw
2 large cloves of garlic chopped
1 small bunch of kale, center ribs removed and finely chopped - sliced tomatoes
salt & pepper to taste
olive oil
balsamic vinegar, red wine vinegar or fresh squeezed lemon - If your chickpeas are raw, soak overnight in water, boil in salted water until tender.
Save the boiling water and cook kale and garlic until desired tenderness (10 minutes is good.) Drain and mix chickpeas and kale together and add the salt, pepper, oil and vinegar.
Serve warm or cold. - Note: The possibilities are endless. Add chopped tomato, red pepper flakes, red onion finely sliced. Have fun!
