Do you remember this old time favorite? I sure do. This cake is awesome. You must try this one.
2 cups sugar
½ cup butter (1 stick)
2 egg yolks
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup milk
3 crushed bananas
1 teaspoon vanilla
2 egg whites, beaten
Combine the sugar and butter. Beat on low speed until combined.
Add the egg yolks and beat on high speed until fluffy.
In a separate bowl, combine the dry ingredients and whisk thoroughly. Pour dry ingredients slowly into egg/sugar/butter mix alternating with milk, beating until incorporated.
Mash bananas and add them to the batter.
Add vanilla and beat until combined.
In a separate bowl whip the egg whites until they form stiff peaks. Fold into batter.
Pour batter into 2-9 inch prepared cake pans. You can also use 3-8 inch pans.
Bake 350 for 35 minutes, until a toothpick inserted in the center comes out dry.
Cool before frosting.
1 cup milk
5 tablespoons all- purpose flour
1-1/2 cups brown sugar
1 cup butter (2 stick butter)
1 tablespoon vanilla
1 teaspoon salt
Stir the milk and flour together and mix over medium heat for 5-10 minutes, until it thickens.
Set the milk aside to cool.
Combine the sugar, butter, salt and vanilla in a mixer. Beat on medium speed for 5 mins (colder butter will take longer) until the sugar is dissolved and you don’t taste the graininess anymore. It will be very fluffy.
Add the milk mixture to the butter mixture and stir until smooth
