If you love eggplant, this is a tasty side dish that you can eat hot or cold. Make sure you use lots of grated cheese. Yum!
1 medium onion, diced
1 celery stalk, diced
1 red pepper, diced
2 medium tomatoes, diced
salt/pepper to taste
2 eggs beaten
about ¼ cup grated Italian cheese
Cut eggplants in half lengthwise
Scoop out insides leaving about 1/4 inch
Dice the scooped out eggplant, dice all other veggies and give all veggies a quick fry in olive oil. Take the mixture off the stove and mix in beaten eggs.
Place the veggie mixture back in the eggplant halves. Top with a sprinkle of breadcrumbs and lots of grated cheese. Sprinkle tops with more olive oil and bake at 350 for 45 minutes. Slice into pieces to serve.
