Peach Cobbler


Although this recipe could be made with apples I decided to use peaches since they were in season. This is a must with ice cream on top. You have to try this!

Ingredients
8 large peaches, peeled and cut in ¼ inch slices
4 Tablespoons butter
1 cup sugar (I used ½ cup Splenda Blend)
1 teaspoon vanilla
1/2 teaspoon cinnamon
¼ cup brandy
2 Tablespoons cornstarch

Peel and slice peaches. In a large fry pan, melt butter and add peach slices. Add sugar, vanilla, cinnamon and brandy. Bring to a boil and lower to simmer for about 7-10 minutes. Take off of the heat and add the cornstarch, stirring to combine. Set aside.

Crumble topping
1/2 cup flour
½ cup crushed graham crackers (3 whole crackers)
1/2 cup oats
6 Tablespoons butter, melted
1/2 cup brown sugar
¾ teaspoon cinnamon
½ cup chopped walnuts or pecans

Add all crumble ingredients and mix.

Pour the peaches and juices into an 8×8 baking dish and top with crumble mix, pat down a bit.
Bake at 350 for 30 minutes

    Looks amazing! I just watched a cooking show last night where they cooked the fruit in a pan like this. I bet it’s delicious;)
