Pizza Tarts


This makes a great appetizer or just add a side salad and you are set. SO darn good! Makes 8 tarts.

Ingredients
8 slices white bread, crust trimmed off
¼ cup olive oil
4 oz cream cheese
2 basil leaves, chopped
¼ teaspoon Italian seasoning
Salt/pepper
Fresh mozzarella ball, 8- ¼ inch slices
Tomato, 8- ¼ inch slices

Preheat the oven to 375.
Remove the crusts from the bread and using a rolling pin, gently press the slices of bread down flat until they are thin and almost doughy. Brush both sides of the bread with olive oil. Press the slices into a muffin tin or ramekin, to form a tart shell. Set aside.
In a small bowl, using a fork to combine, mix together the cream cheese, basil, Italian seasoning, salt, and pepper until smooth and creamy. Drop about a tablespoon of the cream cheese mixture into the bottom of each tart. Top with a slice of tomato and a slice of mozzarella and a splash of olive oil. Bake the tarts until golden and crusty, 20-25 minutes depending on tart size.

    OMG, they look sooooo yummy. I will have to try these, and soon.

  4. Pizza always seems to be a hit on this blog. LOL
    Make sure you semi cool these before you take them out. I pulled them out early, took a quick picture, gobbled them down and burned my tongue. Also they will hold their tart form better if cooled.
