Cinnamon Scones


I have been on a quest to find the perfect scone recipe. I think there will be more to come. This one is delicious and super easy but comes out on the soft side, more cake like. Definitely a keeper but I must continue my search. Maybe something chocolate/cinnamon (?) I’ll keep you posted…

Ingredients
Dough
2 cups plus 1 tablespoon, all purpose flour
3 teaspoons baking powder
3 tablespoons sugar
½ teaspoon salt
3 teaspoons cinnamon
1-1/4 cup heavy cream

Mix all ingredients in a large bowl. Make sure everything is incorporated. I turned it out on the table and kneaded it a bit. Cut dough in half and flatten on a cookie sheet. I use my silpat all the time. BTW if you don’t have one, it’s definitely worth getting. If you don’t have one you can use parchment paper. Flatten both out with your fingers. Make sure they are even. (see picture below) and score to get 8 triangles. Bake at 400 degrees for 15 minutes. Cool and top with as much icing as you like.

Icing
1 cup powdered sugar
1/2 teaspoon cinnamon
3 tablespoons milk
1 teaspoon vanilla

  2. They taste wonderful Tom. I need to hide them. I can’t stop taking just one more taste. LOL @ the credit cards!
