Fruit Tart

After testing several recipes, I came up with something that I am really pleased with. This is super easy and delicious!

Tart crust
1-1/4 cups all purpose flour
1/2 teaspoon salt
1 tablespoon sugar
1 stick chilled butter cut in 1/2 slices
1/4 cup ice water

Place all ingredients in a mixing bowl and blend together until it forms a ball of dough. Flatten down a bit and wrap the dough in plastic. Chill in refrigerator for 30 minutes.

Preheat oven to 400

Place dough on a lightly floured surface and roll out to about 10 inches in diameter for a 9-inch tart pan. Prick bottom of shell with a fork. Lightly place foil on top of shell and top with 1 cup raw rice or beans. This will stop the shell from puffing up while baking. Bake for 20 minutes or until the edges turn golden in color.

Filling
8 oz. mascarpone cheese
1/3 cup cold heavy cream
1/4 cup sugar
1/4 teaspoon vanilla

Beat together mascarpone cheese, heavy cream, sugar and vanilla using an electric mixer at high speed until mixture holds stiff peaks, about one minute. Spoon filling into the well cooled crust. Top with berries of your choice and brush with glaze to achieve a glossy shine.

Glaze
1/4 cup currant jelly. Warmed slowly until spreading consistency.
