Lite wheat bread

This is a great lite wheat bread. Egg wash always makes this bread look so pretty.

Ingredients
3 cups whole wheat flour
2 cups white bread flour (I used high gluten flour from KA)
1 tablespoon instant yeast
1 tablespoon salt
¼ cup honey
¼ cup semi soft butter or oil
1 ½ cups warm water
1 egg

Egg wash: 1 egg yolk mixed with 1 teaspoon of water

I mix all ingredients in my Kitchenaid for 5 minutes, turn it out on a floured surface and knead by hand for about another 5 minutes. Place dough in a greased bowl and let rise for 1 hour in a warm draft-free place. Rise a second time for 1 hour in a large bread pan covered (10 1/2 x 5 1/2) with a kitchen towel. When you are ready to bake, give it a quick egg wash. Bake at 375 for 30 minutes. This makes one large bread. You can split it into two smaller loaf pans if you like.
