You must try this recipe. It makes a perfect challah every time and think about the delicious French toast you’ll have in the morning.
Challah bread with sesame seeds
* 1 cup lukewarm water
* 2 eggs
* 2 egg yolks
* 2 tablespoons oil
* 3 tablespoons honey
* 4 1/2 cups bread flour
* 1 teaspoon salt
* 1 1/2 teaspoons instant yeast
* sesame seeds or poppy seeds ( optional )
Egg wash: Mix 1 egg yolk and 1 teaspoon water together. Brush on top before baking.
In a bowl combine the water, eggs, oil and honey together. Whisk till all the liquid ingredients are well mixed. Pour mixture into a large bowl. Add in bread flour, yeast and salt. Beat together till smooth and very well mixed. Knead for 10 minutes by hand or 5 minutes using a stand mixer w/dough hook. Knead the dough until it becomes soft and elastic. You may need more flour, that’s OK just add it 1 heaping tablespoon at a time till the dough is workable without sticking to your hands. But, not too dry either. It’s better to be on the sticky side rather then the dry side when making any kind of bread. After the dough has been kneaded place into a greased bowl and turn dough over to lightly coat all sides. Cover with plastic wrap and allow to rise till double in size. This will take an hour to an hour and a half. After dough has risen place onto a flat surface and cut into three equal parts. Roll out each piece of dough into a 15 inch rope. Now, connect the three pieces of dough at one end. Start to braid the dough starting from the right side. Once the dough has been braided pinch the ends and tuck under to make a nice looking end. Place the dough onto a parchment lined cookie sheet. Cover the dough with plastic wrap and allow to rise till double in size about an hour to a hour and a half. Brush with egg wash. If you like it seeded on top, sprinkle sesame seeds or poppy seeds and place into a pre heated 375 degree oven for 25-30 minutes until the loaf is deliciously browned. Cool on a wire rack.
