Green Chili Cheddar Bread
3-1/2 cups white flour
1 tablespoon sugar
1-1/2 teaspoons salt
1 teaspoon instant yeast
2 tablespoons oil
1-2/3 cups ice water
8 ounces very sharp cheddar cheese
2 small cans chopped green chilies, drained
In a large bowl, stir together the flour, sugar, salt and yeast. In another bowl, whisk the oil into the water. Stir the mixture into the bowl with flour until thoroughly blended. You should have a very stiff dough. Cover the bowl with plastic and allow to rise until double the size. About 1-1/2 to 2 hours.
Add cheese and chilies to dough mixture. Fold in well to ensure they are evenly distributed. Invert the dough into a well-greased 9×5 inch loaf pan. Evenly brush the dough top with oil. Cover with plastic and allow to rise in a warm, draft free place for about an hour.
Preheat oven to 375 F. Bake for 1 hour until the top is nicely browned; cover the top with foil as needed so as not to burn. Cool in the pan for 10 minutes then turn out the loaf and cool thoroughly before eating. Enjoy!
